5 Back to School Quick and Easy Healthy Lunch Ideas


When it comes to being a student, trying to avoid the freshmen 15 is not an easy task. Trying to get all your vegetables and nutrients into one meal while making it compact and portable can be a challenge. The best lunches I find are the ones that require no heat because you can literally pull your meal out of your bag and eat it instantly with ease. Here are some of my suggestions:

Ingredients

  • Cloud bread 
  • Lettuce
  • Greek yogurt
  • Chia seeds
  • Cheese slices
  • Turkey slices

Steps 

  1. Mix greek yogurt and chia seeds to make a dressing (can be substituted for mustard)
  2. Spread dressing on cloud bread
  3. Layer chosen toppings on top
  4. Hold sandwich together with toothpicks & enjoy!

Vegetable Spring Rolls5 Back to School Quick and Easy Healthy Lunch Ideas vegetable spring rolls
Ingredients

  • Medium boiled egg sliced
  • Grated carrots
  • Sliced cucumbers
  • Lettuce
  • Rice paper

Steps

  1. Soak rice paper in warm water for a few seconds and remove
  2. Lay rice paper flat on a wooden board or flat surface
  3. Begin laying fillings in the spring roll horizontally close to one end with 1-2 inches to spare on the sides
  4. Lift the side of the rice paper closest to you and roll up the toppings halfway
  5. Fold in the 1-2 inch sids to enclose the fillings
  6. Roll all the way up & enjoy!

Filling Ingredients

  • Grated carrots
  • Sliced Cucumbers
  • Sliced medium- boiled eggs
  • Romaine lettuce
  • Seaweed sheets

Dipping Ingredients

  • Cubed or minced ginger
  • 1 Part rice vinegar
  • 1 Part sesame oil
  • 2 Parts sushi soy sauce
  • Wasabi (optional)

Steps

  1.  Lay out a sheet of seaweed with the concaving horizontal creases in front of you
  2. Place and stack fillings in a narrow, even line close to the edge near you of the seaweed sheet
  3. Apply water or a mix of rice vinegar and sesame oil to the end of the sheet of seaweed to help the roll stick
  4. Lift up the edge of the seaweed sheet and begin rolling while tucking the fillings under in a compressed motion
  5. Continue rolling until the end
  6. Use a knife greased with sesame oil to slowly and carefully slide the sushi roll
  7. Mix all ingredients for the sauce together & enjoy!

Ingredients

  • Canned water- soaked tuna
  • Diced pickled hot peppers
  • Diced dill pickles
  • Greek yogurt

Steps

  1. Combine all ingredients together

May add diced celery for more texture if wanted
