These have to be the cutest healthy Halloween treats that I have made this year. They are my absolute favourite and SO EASY to make. Not to mention it’s great for kids! With cute faces smiling at you, what more can you want? This is also great for making with the kids. Give them a sharpie and let them draw the faces on the disposable shot ups themselves! let their imaginations run wild!
There are quite a few variations of this recipe that I have compiled to achieve whatever your taste buds prefer.
Frankenstein Mousse Cups
The serving ‘spoons’ are just mini wooden popsicles I found at the Dollarstore. You can also use wooden coffee stir sticks that are cut up if you can’t find mini ones. The hair is also created with Chia seeds to add some protein and fiber into these treats! Meanwhile, the faces are just drawn on with Sharpies on disposable shot cups. Feel free to make bigger portions with bigger disposable cups.
MOUSSE BASE 1: Avocado Pudding
- Mash up as many avocados needed for your serving size.
- Mix in honey until you achieve your desired sweetness
- Pipe mixture into shot cups. Best served cold.
MOUSSE BASE 2: Coconut Cream
- Scoop out the thicker portion out of can into a bowl. We will be using that.
- Dye the mixture green with food colouring
- Mix and pour into shot ups
- Freeze for about 15-20 minutes. DO NOT FREEZE FOR TOO LONG. IT WILL BECOME HARD LIKE ICE.
- Serve chilled.
MOUSSE BASE 3: Coconut milk
- Mix thick coconut milk with green food colouring
- Add honey until desired sweetness
- Optional- add a dash of vanilla
- Pipe into shot cups. Serve chilled for best results, but will still hold it’s consistency chilled or not.
Pumpkin Mousse Cups
MOUSSE BASE 1: Coconut Milk
- Mix thick coconut milk in two portions with green and orange food colouring
- Add honey until desired sweetness
- Optional- add a dash of vanilla
- Pipe orange into shot cup first and smooth flat
- Pipe green on top, and pull up in a moderately fast motion to achieve the stem look
- Serve chilled or warm
MOUSSE BASE 2: Coconut Cream (WILL NOT GET STEM PEAKS WITH THIS RECIPE)
- Scoop out the thicker portion out of can into a bowl. We will be using that.
- Split into two portions and dye one orange, the other green.
- Pour orange into shot cup and freeze for about 10 minutes
- Pour green into shot up
- Freeze for about 15-20 minutes. DO NOT FREEZE FOR TOO LONG. IT WILL BECOME HARD LIKE ICE.
- Serve chilled.
